En contraposici\u00f3 al terme\u00a0<em>fast food,\u00a0<\/em>apareix aquesta organitzaci\u00f3 \u00abeco-gastron\u00f2mica sense \u00e0nim de lucre\u00bb, la qual fomenta activitats d&#8217;educaci\u00f3 del gust, elabora estrat\u00e8gies per recuperar varietats tradicionals o productes artesanals antics o fins i tot promou la creaci\u00f3 de la Universitat de les Ci\u00e8ncies Gatron\u00f2miques&#8230; menjar local i, sobretot, de qualitat&#8230;<\/p>\n<p style=\"text-align: justify;\">Slow Food ha creat un cat\u00e0leg de productes alimentaris (d&#8217;elevada qualitat organol\u00e8ptica, vinculats a una \u00e0rea geogr\u00e0fica, resultants de produccions artesanals i en situaci\u00f3 de perill d&#8217;extinci\u00f3) amb l&#8217;objectiu de promocionar-ne el seu consum (<strong>Arca del Gust<\/strong>). D&#8217;aquests alguns s\u00f3n distingits pels\u00a0<strong>Baluards<\/strong>, \u00abproductes pels quals s&#8217;han creat projectes a petita escala per ajudar als productors alimentaris artesanals a conservar els seus m\u00e8todes de treball i els seus productes tradicionals\u00bb.
